NKWOBI (COW LEG)






Hello everybody, I hope everyone is doing well??
   You know how you just get tired of eating rice, beans or a particular soup and start craving something different from the norm. Well...... this was our situation. So, my friend Jumaima and I decided that we try something new and she suggested Nkwobi.
   Nkwobi is a delicious native dish and by delicious I mean mouth watering, finger licking, the list is endless (Lol). It is commonly prepared in the eastern part of Nigeria. This is not a typical everyday meal because it's quite expensive to prepare in Nigeria. It's one of those meals you prepare for events, buy from restaurants or pepper soup joints if you are interested in seeing how it was prepared, then keep reading.


                                                           INGREDIENTS
                                                           Cow leg
                                                           Potash
                                                           Palm oil
                                                           Onions
                                                           Efuru/Ere (calabash nutmeg)
                                                           Fresh pepper (optional)
                                                           Crayfish
                                                           Maggi
                                                           Grounded red pepper
                                                           Black pepper (optional)
                                                           Utazi leaf (but I used uziza leaf)
                                                           Scent leaf
                                                           Salt

                                                       PROCEDURE
* Wash your cow leg and boil with water until it is soft which will take a while, but don't allow it to be
    too soft.
* Cut into smaller pieces, add your chopped onions, fresh pepper, maggi, salt and little water allow to
   boil till the water is dried.
* Dissolve the potash in a bowl containing little water.
* Put sufficient amount of palm oil (according to the quantity of cow leg) into a different pot and add
   the potash mixture into the palm oil until it becomes thick and light orange in colour.
* To this mixture add your crayfish (sufficient quantity), your red and black pepper. I love pepper so I added more than usual. Then add the grounded efuru,  maggi and salt then stir.
*  Then add the cow leg and stir properly. Taste to check for salt and so on.
* Add the already cut leaf (uziza leaf was what was available and the scent leaf is completely
   optional) and stir. Then heat for 5 minutes
*  Garnish with fresh pepper and fresh onions.
*  Serve with any drink of your choice.
