NIGERIAN PEPPER SOUP WITH ASSORTED MEAT.


Nigerian pepper soup is one of my favourite soups to prepare. It's an easy recipe that doesn't require much. Nigerian pepper soup can be made using goat meat, chicken, catfish, assorted meat and so on. I used assorted meat to make it. Nigerian pepper soup is usually peppery, but this is  not compulsory. It just depends on how you like it, but I prefer mine peppery.


                                                               Ingredients
Assorted meat (shaki, beef, kidney,cow leg)
2 Tablespoons of pepper soup spice
2 Table spoons of crayfish
1/2 Table spoons of black pepper
2 Table spoons of red pepper
2 Cubes of Maggi
5 Cups of water
2  Ehuru (calabash nutmeg)
1/2 Bell pepper (Red)
Scent leaf
Salt to taste



                                                                Procedure
In a pot containing the assorted meat; add water, season using  pepper, salt, maggi, onions and allow to boil till it's tender.

Top up the water to your desired level.

Add the pepper soup spice, efuru, crayfish, maggi, salt, bell pepper and allow to cook for 20 minutes.

Add the scent leaf and allow to simmer for about 5 minutes.

Your pepper soup is ready. you can serve alone or with Agidi, bread, rice. which is what I love to serve mine with.

PS:
I had previously boiled the cow leg and shaki separately before boiling it together with the beef because it takes a while to become tender.
