ENGLISH SAUCE

Guess what guys?? The festive season is around the corner ***drumrolls***. Have you ever imagined this season without the party jollof rice, fried rice, chicken, drinks e.t.c? Well, let's not even think about it. And you are probably saying "but food isn't the essence of Christmas/new year", Yeah don't we all know that? It is an integral part of it, whether you agree or not. So, because the festive period is fast approaching you will be seeing more recipes.
Today's recipe is the English sauce. The first time I ate this sauce, i fell in love and since then I have been stalked on it {falzs voice). If you love fried rice, then you should probably try this one out. The English sauce is a rich & colourful sauce made with various veggies, chicken, gizzard, sausage and so on. Basically, anything you like can be put in it. It can be served with rice, spaghetti, potatoes and so on .

                                                               INGREDIENTS
500g of Mixed vegetables
2 Bell Peppers (Red)
1 Bell Pepper (green)
6 Irish Potatoes (medium size)
5 Table Spoons of Groundnut oil
130g of Runner beans
800g of Cabbage
4 Big Carrots
500g of Gizzard
500g of chicken breast
Chicken laps
1 Teaspoon of dried Rose mary
6 Cloves of Garlic
A Slice of Ginger
2 Table spoons of Dried Red pepper
1 Table spoon of Dried Black pepper
6 Pieces of chicken sausage
4 Bay leaves
1/2 Teaspoon of Nutmeg
1 Table spoon of curry powder
2 Cubes of maggi
2 Table spoon of chicken spice
1 Table spoon of salt
2 Tablespoons of flour


                                               PROCEDURE

  • To a pot containing chicken breast, chicken laps and gizzards, add red & black pepper, ginger, garlic, rosemary, curry powder, bay leaves, maggi, salt and water allow to boil for 25 minutes and set aside.
  • To another pot containing the already heated groundnut oil, add the onions, chopped potatoes, maggi and stir for 7 minutes on medium heat
  • To the above mixture, add the chopped carrots, pounded ginger & garlic, rose mary, nutmeg and stir for for 5 minutes.
  • Add the bell peppers, mixed vegetables, runner beans, sliced cabbage and mix properly.
  • Add the red and black pepper, maggi cubes, curry powder and salt to taste
  • Add the chicken stock, gizzard, chicken breast, chicken sausage and allow to cook for 10 minutes.
  • Dissolve the flour in water and use it to thicken the sauce, mix properly.
  • Cook for another 3 mins and voila it is ready to be served. 


P.S: The carrot, mixed vegetables, chicken breast, sausage, cabbage, gizzard should be chopped evenly in order to give the meal a nice appearance.
P.P.S: The chicken stock should be about a cup full because the sauce tend to produce it's own water. In a case where the water in the sauce is too much, you can add the flour directly instead of dissolving it in water.
