NIGERIAN MEAT PIE.


Meat pie is a very popular Nigerian snack, that is loved by almost everybody if not all. There is hardly a celebration without meat pie. Seeing that the Festive season is here, you can be sure to find it at events.
It is actually one of my favourite and go-to Nigerian snack. I used to like my meat pie really stuffed and by stuffed I mean, I get to use different veggies in making the filling. But for this one, I decided to cut down on the filling. I must say that it came out really yummy!! Am definitely going to be sticking to this cut down filling.

Ingredients for the filling:
500 g of minced meat
3 Irish potatoes (diced)
3 Carrots (diced)
1 onion bulb
A thin slice of fresh ginger
2 cloves of garlic
2 cooking spoons of groundnut oil
1/4 teaspoon of dried rose mary 
1/2 teaspoon of black pepper
1 teaspoon of red pepper
1/4 teaspoon of curry
1/4 teaspoon of Nutmeg
2 bell peppers (red and yellow)
2 table spoons of flour
1/2 teaspoon of salt
2 cubes of Maggi
A cup of water

Ingredients for the dough:
1 kg of flour
500 g of Margarine
1 tablespoon of baking powder
1 Egg
1 cup of water
A pinch of salt


Procedure:
To make the filling:
  • Pour the groundnut oil into a pot and heat for about 2 minutes on medium heat. Then add the sliced onions, stir and allow to fry for roughly 2 minutes.
  • Add the potatoes, stir for about 2 minutes. Now add the chopped carrot and continue stirring.
  • To the above mixture, add the chopped bell peppers followed by the condiments (rosemary, pepper curry nutmeg, grounded ginger & garlic, salt and maggi to taste.
  • Now add your minced meat and fry till it's colour changes to brown
  • Add a cup of water allow to simmer for 5 minutes, add the flour to thicken it.

For the dough:
  • In a bowl containing flour, add the dry ingredients(salt and baking powder) and mix.
  • Now add the margarine and mix until it becomes uniform (becomes crumbly).
  • Add water little by little until the mixture is no longer sticky.
  • Sprinkle a little quantity of flour on a clean surface. Place the dough and start kneading until it's soft and fluffy.
  • Sprinkle a little amount of flour on the rolling pin and rub lightly. Roll out the the dough to your desired thickness (preferably thin).
  • Whisk the egg in a bowl and set aside.
  • Begin to cut the dough with a meat pie cutter or bowl.
  • Add the filling to the centre of the dough.
  • Rub the egg mixture on the edges of the internal surface of the dough.
  • Close the dough, by allowing the egg covered edges to meet. Using a fork seal the edges of the pie
  • Glaze the pie with the egg.
  • Cream the pan with margarine followed by a little quantity of  flour and hit the back of the pan to remove the excess.
  • Place the meat pie on the prepared pan and place in the oven for about 35 - 40 minutes.

And there you have it, your meat pie is ready!!!! Serve with any drink of your choice.

PS:
I mistakenly used 550 g of margarine instead of 500 g, it was still good.
For the filling, I didn't dissolve the flour with water because I had previously added water to it. I just added the flour directly to the filling.
