EASY COCONUT CURRY CHICKEN RECIPE


TGIF!!! I have been low-key looking forward to the weekend. This week was really exhausting plus I haven't been feeling too good but Thank God, I am much better. I hope everyone is doing fine?.
Today's post is all about 'Coconut Curry Chicken'. This is fast becoming one of my favorites. It's perfect for those days when you don't feel like doing too much but still want a meal that looks like you did a lot or fancy. You would be amazed at how easy it is. It's also a perfect alternative for stew and can be served with rice, spaghetti and so on.
            
                                       
                                                           INGREDIENTS
  • Chicken Breast
  • 1 Can of Coconut milk (400ml)
  • 2 Table Spoons of Curry
  • 1 Onion Bulb
  • 2.5 Cooking Spoon of Groundnut oil
  • 2 Fresh tomatoes
  • 2 Cooking spoons of grinded Tomato puree
  • 0.5 Table spoon of black pepper
  • 0.5 Table spoon of red pepper
  • 2 Cubes of Maggi
  • 2 Cloves of Garlic
  • 0.5 Tablespoon of salt
  • 1 Table spoon of Sugar


                                                            PROCEDURE
Step 1: Heat up the groundnut oil in a dry pot.

Step 2: Add the chopped onions, curry powder, garlic and stir for a few minutes.

Step 3: To the above mixture, add the chicken breast and stir until it's cooked.(do this on low heat)

Step 4: Add the chopped tomatoes and tomato puree and stir for about 7 minutes.

Step 4; Pour the Coconut milk, pepper, maggi, salt and mix properly.

Step 5; Add the sugar and allow to simmer for 20 minutes.

There you have it Guys, it's ready to be served!!!!

PS: The sugar helps bring out the sweetness of the coconut milk but if you do not like the idea of adding sugar then you can skip this.

PPS: I fried the tomatoes instead of adding it directly to the coconut milk because I don't like the sour taste of tomatoes but you can do otherwise
